Granulated garlic is more readily dispersible than garlic flakes and provides more bulk and thickening properties than powdered garlic. Use it when you want garlic flavor, but not texture. It works well in blends, and with canned, frozen and dry packaged foods. To add garlic granules to hot foods, or foods lacking enough water for rehydration, first mix granules with enough cool water to make a smooth paste. To obtain maximum fresh garlic flavor, the paste should be added toward the end of cooking time. One teaspoon of garlic granules is equivalent to one clove of fresh garlic.
